Peanut Butter Energy Balls
Ingredients:
1 1/ 4 cup rolled oatmeal
2/ 3 cup peanut butter
1/ 4 cup honey
How to Make It:
STEP 1
Combine all ingredients in a bowl, roll batter into 1 inch sized balls, & store in the fridge!
CHICKEN MARINADE
300 grams raw chicken breast, cut into cubes
1 teaspoon garlic powder
1 heaping teaspoon paprika
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon red chili flakes
1 teaspoon salt and pepper
1 lime, juiced
GREEN SAUCE
1/ 2 avocado
100 grams fat-free or low-fat greek yogurt
Handful of coriander or cilantro
1 teaspoon garlic powder
1/ 2 teaspoon salt and pepper
1/ 2 lime, juiced
How to Make It:
CHICKEN MARINADE
STEP 1: Mix till it changes color.
STEP 2: Cook the chicken for 4 mins on each side and set aside. I used cooking spray but you can use olive too
MEXICAN RICE
STEP 1: Season with the same spices you used for the chicken with 1-2 tbsp of tomato paste.
TO SERVE
140 grams Mexican rice
Chicken pieces
Shredded lettuce
Bell peppers and onion
40 grams sweet corn
40 grams black beans
20 grams low fat sour cream or yogurt
Generous amount of green sauce
